Angie's Salad
Method
Make the dressing
In a small bowl, whisk together the juice of 1/2 lime, the garlic, mustard, orange juice, honey, salt and pepper. Keep whisking and slowly pour in the grapeseed oil in a thin stream, so the dressing thickens and comes together.
Candy the walnuts
Put the butter, walnuts and brown sugar in a small saucepan over medium heat. Cook for 5 to 8 minutes, stirring often, until the butter and sugar have melted and the walnuts are coated. Let them cool in the pan.
Get the fruit ready
Slice the pear and dice the avocado. Squeeze the other 1/2 lime over the avocado so it doesn't brown.
Put it together
Arrange the mixed greens in a large bowl or on a platter. Top with the pear, avocado, cucumber, feta and candied walnuts.
Dress and serve
Whisk the dressing again, pour it over the salad and serve right away.
