Pineapple Delight
Method
Make the crust
Heat the oven to 375°F (190°C). Set aside 1/4 cup of the graham wafer crumbs for the top. Mix the rest with the 1/2 cup melted butter and press firmly into an 8x8-inch square pan.
Bake and cool
Bake for 10 minutes. Let the crust cool completely so the filling doesn't melt.
Make the butter layer
Beat the other 1/2 cup butter (softened) with the icing sugar until light and creamy. Add the eggs one at a time, beating well after each one. Spread evenly over the cooled crust.
Add the pineapple cream
Whip the cream until it holds its shape, then fold in the drained pineapple. Spread it over the butter layer and sprinkle with the crumbs you set aside.
Chill overnight
Cover and refrigerate overnight so it sets. Cut into 16 squares to serve.
Mom's notes
- May be served with an extra spoonful of crushed pineapple on each slice.
Good to know
- The eggs in this recipe aren't cooked. Pasteurized eggs are the safer choice, especially for anyone pregnant, older, very young or with a weakened immune system.
