Turkey Dressing
Method
Dry the bread
Break the bread into small pieces and spread them out so they dry. Leave them out overnight, or dry them in a 300°F (150°C) oven for about 20 minutes, stirring once. The bread needs to be properly dried out so the dressing isn't soggy.
Season the bread
Put the dried bread in a large bowl and add salt, pepper and sage.
Cook the onion and celery
Melt the butter in a frying pan and cook them until soft.
Combine
Add the onion, celery and butter to the bread with the sugar and mix well. It should be moist but not soggy.
Without the turkey
If you're not stuffing the turkey, put the dressing in a baking dish, cover it with foil and refrigerate until you need it.
Heat it up
Bake the covered dish at 350°F (175°C) for 30 to 40 minutes, until hot all the way through. It won't take long, so check it after 30 minutes.
