Toasted Fajita Rice

Leftover rice tossed with fajita spice and a single teaspoon of oil, then baked and broiled until the edges crisp. Great with fajita bowls.

Method

  1. Season

    • Heat the oven to 400°F (205°C). Toss the warm rice with the oil, spices and onion until well mixed.
  2. First bake

    • Spread on a baking sheet in a flat layer, bunched slightly so it doesn't dry out. Bake 10 minutes.
  3. Stir and bake again

    • Stir thoroughly, flatten it out again and bake 5 minutes more.
  4. Broil

    • Switch to broil and watch closely. Pull it after 1–2 minutes, as soon as the edges crisp.

    A small amount of rice browns very fast under the broiler.

Good to know

  • Using cold rice from the fridge? Use 1½ tsp oil to break up the clumps, and bake 12 minutes for the first round instead of 10.
